17 Feb Apricot, Almond And Orange Zest Truffles
- 1 cup ground almonds
- 2 cups desiccated coconut
- 1 cup soaked dried apricots and some juice
- zest of one orange
- Add all the ingredients minus the juice into a food processor or blender and blitz up until well combined. Then add in some extra juice or water until it begins to stick together and able to be rolled into balls. If its to wet add more coconut, if its to dry more juice.
- Roll into balls and through some extra coconut and store in the freezer.
