Banana Kumara Muffins

No grains, no diary, no sugar and they taste amazing. This is the perfect recipe to make plenty of. Theses are a great snack, has protein, good carbohydrates and fats. Not sure how long they will keep, but can’t imagine them lasting to long.

 

 

Ingredients

  • 2 Large kumara
  • 3 bananas
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup crushed almonds or walnuts
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 tablespoon honey
  • 1 table spoon coconut oil
  • 1 cup of coconut flour/almond flour
  • 2 eggs

Cooking Instructions

  1. Heat oven to 200 degrees celsius
  2. Remove skin from kumara and cook.
  3. With a whiz blend up kumara and bananas until smooth.
  4. Add all other ingredients and mix together.
  5. Pour mix into muffin tins about 3/4 full and place in oven for around 15 minutes, until a skewer comes out clean and they are golden on top.
  6. Serve with butter or coconut cream!

    Yuuuum! So gooooood for something so healthy! Mine took longer than 15 mins. I actually turned the oven off at 15 mins but left the muffins in while the oven cooled down. I am already on to my second batch and have added blueberries this time too! Sally G

    I can not believe the muffins in the picture were made following these directions. Great taste but 200 degrees can not be the right temperature. Mine are raw after 15 minutes. Turned oven up to 35o and cooked for 15 minutes more and they did not rise. Same shape as when I put them in the pan. Followed directions and triple checked to make sure I didn’t forget something.

      Hi, thats odd that they havn’t cooked properly. I have made this recipe a lot. Maybe look at the size of the muffin. Mine were quite small, you can see in photo. So the bigger the muffin the longer it will take. The only thing that requires cooking is the egg, so just make sure the mixture isn’t too runny or the muffins aren’t to big, it shouldn’t take to long to cook. Hope this helps.

      Hi, just thought I would also see if you had the right temperature, it was 200 degrees celius not fahrenheit. Hope they work for you next time :)

      Nicola – it might be helpful in your post to put that it’s celius. I just undercooked mine also :) they are back in the oven at 350 F to cook :)
