Check out these clean eating Breakfast Vege Muffins.
Great to freeze, great to take away, great start to the day.
Ingredients
Vege Rice mix
Salt and pepper to taste
1 egg for every cup of Vege Rice
Pumpkin and sunflower seeds.
This vegetable rice, had cabbage, brocolli, onions, carrots and a sprinkle of cajun spice. I had about 5 cups of this rice, so I used 5 eggs, and salt and pepper to taste. Made 10 muffins.
Preheat Oven to 220
Place mix into muffin tins and sprinkle with seeds. Cook until golden around edges, around 20mins.
Place some in fridge and rest in freezer and these are a great start to the day especially if you are in hurry.
