Broccoli Mash

This is a great substitute for mashed potatoes. Looks amazing on a plate and really easy to make. Only 5 ingredients.

Ingredients

  • 2 Broccoli
  • 3-4 cloves garlic
  • 1 Onion
  • Butter
  • Salt and pepper

Cooking instructions

  1. Lightly cook broccoli by steaming or drop into boiling water for a couple of minutes. Just enough to soften lightly
  2. Heat butter in pan, then cook onion and garlic.
  3. Drain broccoli and place in bowl, and whiz up using electric stick blender. Then add in onions and whiz again until desired consistency.
  4. Serve with any source of protein. This will also keep a few days in the fridge. So great for the next days lunch.

You could spice this up with chilli and I have used cajun spices in it also.
