This is a great substitute for mashed potatoes. Looks amazing on a plate, and really easy to make. Only 5 ingredients.
- 2 Broccoli
- 3-4 cloves garlic
- 1 Onion
- Salt and pepper
- Lightly cook broccoli by steaming or drop into boiling water for a couple of minutes. Just enough to soften lightly
- Heat butter in pan, then cook onion and garlic.
- Drain broccoli and place in bowl, and whiz up using electric stick blender. Then add in onions and whiz again until desired consistency.
- Serve with any source of protein. This will also keep a few days in the fridge. So great for the next days lunch.
You could spice this up with chilli and I have used cajun spices in it also.
