Carrot Hummus

This surprised me with the taste. It actually got better the longer it was in the fridge. So best made the day before you need it.

INGREDIENTS

5-6 large carrots 1 cup sunflower seeds 1 tablespoon tahini 1/2 cup lemon juice 2 cloves garlic crushed Salt and pepper
SERVES: 2
Construction Instructions

Cook carrots by chopping up into dices and boiling until soft, then mash.

In a blender place sunflower seeds and blend until crushed.

Combine all ingredients in a bowl.

Adjust flavors to your liking by adding more garlic, lemon or tahini.

Season with salt and pepper.
