Clean Eating Berry Bar

This clean eating berry bar is gluten free,  grain free and sugar free such an amazing sweet treat. I made this in a square dish, so hence its called a bar, however its soft like a cake. Could be made in cake dish or even into muffins. Have this on your treat days and still fill good afterwards.

 

Ingredients

  • 1 cup coconut flour
  • 1/2 cup shredded coconut
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 tsp salt
  • 3 tablespoons honey
  • 2 bananas
  • 2 eggs
  • 2 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk or almond milk
  • 1 cup mixed berries
Cooking Instructions
  1. Preheat oven to 160 degrees celsius. Line square baking tin with baking paper or grease with some butter.
  2. Combine all dry ingredients in a bowl
  3. Melt butter and honey together
  4. Combine wet and dry ingredients until smooth, then add berries last.
  5. Place mixture into tin and place in oven.
  6. Cook for 45-55 minutes or until a skewer comes out clean, turn oven down if it gets to brown.
Amazing dessert, serve with some fresh homemade icecream.
