
This clean eating berry bar is gluten free, grain free and sugar free such an amazing sweet treat. I made this in a square dish, so hence its called a bar, however its soft like a cake. Could be made in cake dish or even into muffins. Have this on your treat days and still fill good afterwards.
Ingredients
- 1 cup coconut flour
- 1/2 cup shredded coconut
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 tsp salt
- 3 tablespoons honey
- 2 bananas
- 2 eggs
- 2 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup coconut milk or almond milk
- 1 cup mixed berries
Cooking Instructions
- Preheat oven to 160 degrees celsius. Line square baking tin with baking paper or grease with some butter.
- Combine all dry ingredients in a bowl
- Melt butter and honey together
- Combine wet and dry ingredients until smooth, then add berries last.
- Place mixture into tin and place in oven.
- Cook for 45-55 minutes or until a skewer comes out clean, turn oven down if it gets to brown.
Amazing dessert, serve with some fresh homemade icecream.
