Easy Peasy Banana Protein Bread

You really can’t beat banana bread, this is an easy peasy banana protein bread recipe. No gluten or sugar in site. Clean healthy and delicious. Even packed full of protein.

 Ingredients

  • 1/2 cup coconut flour
  • 6 Eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 c almond flour
  • 2 teaspoon cinnamon
  • 3 mashed ripe bananas
  • 1 tablespoon vanilla extract
Cooking Instructions
  1. Mash the bananas and add the eggs and vanilla, mix until well combined.
  2. Combine the dry ingredients.
  3. Add to the egg/banana/vanilla mixture gradually and stirring at same time
  4. Pour mixture into a lined or greased bread tin
  5. Bake at 160 degrees celsius for 45-55 minutes, or until a skewer inserted in the center comes out clean.

    Hi there,

    I tried to make it this morning but it didn’t come out as expected. The cake tastes too salty and I think that a teaspoon of salt may be a little bit too much. Any suggestions?

      Hi, sorry im not sure what the problem could be. I have made this lots and so to have many clients. You can always leave the salt out next time and see if it is any better. Salt want make much difference to the end result. Play around with your salt and baking soda levels. Hope this helps. :)

        Thank you for your reply. Next time I will try with a mix of baking soda and baking powder and no salt. I will let you know the result.
