Flourless Chocolate Cacao Cookies

These cookies are super dark, fudgy and rich, require no flour or refined ingredients. So full of nutrients. They do contain a lot of coconut sugar which is packed full of nutrients, but still sugar so definitely a treat. 🙂

INGREDIENTS

1 cup coconut sugar 1 cup raw organic cacao powder 1 teaspoon organic coconut oil 1 teaspoon vanilla extract 1/8 tsp baking soda 3 eggs 1/2 cup cacao nibs
SERVES: 2

Cooking Instructions

Preheat oven to 180 C/350F. Line some baking trays with baking paper or grease with butter/coconut oil.

Mix cacao, coconut sugar, baking soda, and vanilla in a bowl until even.

Whisk eggs in a separate bowl, and then add to dry ingredients. Using a whisk mix until it turns into a smooth creamy batter.

Melt coconut oil and add to mix along with cacao nibs.

Using a heaped teaspoon, place mix on sheets, being sure to leave plenty in between. I used two trays to make all my cookies.

Place in the oven and bake for 10 min. Keep an eye on them as they brown quickly and can easily burn.

Remove from oven and allow to cool. Remove, let cool and then transfer to the fridge to allow to set into a super fudgy cookie.
