Summer Salad-2
This is a super refreshing and vibrant salad. Great for summer time BBQs or to have as a mid week meal. Does take some fine dicing and the smaller you dice and the more even the pieces the more amazing the salad will look. I however wasn’t to particular so I went as small and as I could without getting to particular. The taste is really refreshing and goes particularly well with almost any protein source of the BBQ. I served this up with herbed chicken. Check out my complete summer BBQ menu I did here with this dish.

Summer Salad-3
2 large tomatoes
1 cucumber
1/2 medium red onion
1 red capsicum
1 yellow capsicum
½ cilantro and large leaf parsley chopped
zest of one lemon
Juice from one lemon
4 tablespoons olive oil
Salt and pepper to taste

Finely dice the vegetables into small fine cubes, the smaller the better.
Place into a large bowl and zest the lemon and squeeze the juice over top.
Add the olive oil and toss.
Season with salt and pepper and enjoy.
Stores well and can be made ahead of time.
