Chicken made with garlic and lemon, is like a chicken with super powers. I have a huge bag of lemons I was given, so they are getting used as much as I can. Take advantage of fruits and vegetables when they are in season. If you can get some lemons, squeeze the juices, and grate some zest then freeze. You can then use lemon all year round without having to add them to your grocery bill. In NZ lemons are everywhere at the moment, so go talk nice to a neighbor.
- 4-5 Chicken thighs
- 5-6 garlic cloves chopped
- Lemon juice from 3-4 lemons
- Salt and pepper
- Add all the ingredients into a casserole dish and mix so chicken is coated with lemon and garlic.
- Place lid on dish and cook at 180 degrees celsius until chicken is cooked. Approx 30 mins.
I had ours with roast beetroot, yams and steamed broccoli. Pour the juice from the chicken over everything. YUM!!!
Make heaps of roast beetroot and yams so you have lunch and some dinner for next night.
