Gluten Free Pita Bread For One

Been missing pita bread or kebabs?

INGREDIENTS

1 tablespoon coconut oil 1 egg 1 tablespoon coconut milk 1 tablespoon almond meal 1 tablespoon coconut flour 1/8 teaspoon baking soda For the chicken mix 1/2 cup shredded chicken 1/2 avocado 1/4 red onion finely diced 1/2 cup celery finely diced Juice from one lemon
SERVES: 1

When I was in Dunedin my favourite friday night takeaways used to be Kebabs. Since I learned I can’t eat gluten or processed dairy it can be hard to find a good takeaway option that you trust to be gluten free. So just like most things the best way to over come this is to do it yourself. This way I know exactly whats going in it and great for my tummy. Plus tastes amazing! Makes Ben pretty happy to!
Simply adjust the recipe according to how many you need to make.

Instructions
Preheat oven to 180 C/ 350 F
Blend oil, egg, milk, almond meal, coconut flour and baking soda.
Mix to combine well.
Line a baking tray, then pour the mix out onto it. Push the mixture together to form a round bun size mix.
Bake for 12-15 minutes.
Allow to cool, then slice in half.

Instructions for the chicken mix
Place it all into a bowl, mix to combine and make creamy, then fill up the pita bread with the mix and enjoy!
