Kiwifruit and Banana Muffins

These are so tasty and the perfect solution for some sad looking bananas and kiwifruit in your fruit bowl. Perfect for this time of year when kiwifruit are so cheap.

Ingredients

  • 2 cups of coconut flour
  • 1 cup almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 50 grams butter
  • 3 eggs
  • 1 tablespoon honey
  • 4 ripe kiwifruit
  • 2 ripe bananas
  • 1 cup coconut milk

Cooking Instructions

  1. Heat oven to 180 degrees celsius and grease muffin tins.
  2. Combine all the dry ingredients.
  3. Melt butter and honey together and add into dry ingredients with the eggs, mix until combined
  4. Chop kiwifruit and banana and add to mixture.
  5. Add coconut milk in as required, the riper the fruit the less you will need. I used 1 cup, but could get away with less if I had more fruit or the fruit was riper. Combine until it looks like a normal muffin mix.
  6. Place in oven and cook for 15-20 mins or until a skewer comes out clean.

 

Enjoy, these are great to freeze so good to make plenty so you are stocked with healthy snacks.

    Not quite sure what went wrong. I followed the directions to a T. They are mush and inedible, even after cooking longer. 2c of Coco flour seems like a lot, maybe thats whats wrong?

      Hi, im not sure what would of gone wrong, I will make these again in next couple of days and see if there is something wrong with the quantities. :)

        Okay thanks Nicola! I did take a bite out of the mush and the flavors were there. I was so frustrated b/c they had the potential to be very yummy! I will try again after you do :-)
