One Bowl Gluten Free Banana Bread

If there is one thing I dislike when I bake, it’s the dishes afterwards. So thats why I am all about keeping dishes to a minimal and ideally using just the one bowl or just the food processer to create such recipes.  This banana bread is just that, one dish to mix it all in and then into your bread tin. Its a protein packed treat, that’s free from gluten and refined sugar is naturally sweetened by the banana.

INGREDIENTS

1 cup almond meal 1 cup coconut flour 1 teaspoon cinnamon 2 teaspoons baking soda 6 eggs 5 bananas 4 tablespoons honey 1 cup melted coconut oil
SERVES: 1

Instructions

Preheat oven to 180 C

Add the banana, eggs, honey and coconut oil into a food processor or bowl and mix to combine well.

Add to the wet ingredients the rest and mix until well combined and a smooth batter.

Pour the mixture into a lined bread loaf tin and cook for 15 minutes. Cover with foil and then cook for a further 45 minutes or until a skewer comes out clean.

Keep in an airtight container in the fridge.
