Power Protein Crackers

Been missing to have something crunchy? Me too, so these power protein crackers are a new addition to the regime. You just need to try and keep them stocked up now. I think the key is to make a double or triple batch. Great cracker to snack on with the plate because they are full of crunch and protein.

INGREDIENTS

1 cup sunflower seeds 1/2 cup pumpkin seeds 1/2 cup almond flour 1/2 teaspoon sea salt 2 egg whites (or 2 tablespoons dry egg white powder) 1 egg 2 tablespoons of butter Salt and pepper
SERVES: 2

Cooking Instructions

Preheat oven to 160 C/350 F

Place sunflower seeds and pumpkin seeds in blender and blitz up into a fine flour.

Combine all ingredients into a bowl and mix well.

Line a baking tray with paper and put mixture down onto it.

Press mixture out flat using your hands or rolling pin.

Place in oven for 10 minutes.

Remove and cut into squares

Cook for another 10 minutes

Turn the crackers then cook for a futher 5-10 on the other side. Keep an eye on them at this point though.

Remove from oven and store.
