Pulled Slow Cooked Topside With Caramelized Onions And Tomato

I am a huge fan of the slow cooker and this meal is a fantastic fast mid week meal. It does require a little planning ahead, but very little and then once you get home from work will take you less than 10 minutes to whip up. You can never have too many quick and easy meals up your sleeve for those mid week meals for the family, so this one is a winner.

INGREDIENTS

Topside beef roast Chopped tomatoes 2 tablespoons pureed tomatoes 2 red onions 3 garlic finely chopped 1/2 cup of beef liquid from slow cooker 1 tablespoon of fat, I used butter Salt and pepper to season Fresh rosemary leaves finely chopped  
SERVES: 2

I used a topside roast which is a much more affordable cut and getting the roast portion means you will have plenty for lunches the next day. This is a meal that is high in protein from the beef, and full of incredible flavour from the tomato sauce. I served it up simply with some quickly stemmed leeks. Just fill your bowl with the leeks and let this dish bring your plate to life.

Before you head off to work, simply pop a defrosted roast topside in your slow cooker with a cup of water to prevent it drying out. Turn on a low heat and let it cook through out the day. Then once you get home, your house will smell incredible and you will have a dish that takes less than 10 minutes to whip up.

Cooking Instructions

Place topside roast in slow cooker at the start of the day and leave it to cook 6-8hours.

In a pan heat oil/fat and place in garlic and finely sliced onions, allow the onions to soften then add in tomatoes and beef liquid.

Allow it to simmer and thicken up for 2-3 minutes. Then add in rosemary and topside beef, allow liquid to reduce and simmer gently for a couple of minutes.

Season with salt and pepper and sprinkle over fresh herbs.

Serve with freshly cooked vegetables, I used freshly stemmed leeks.

It also contains high levels of phosphorus with is essential for strong teeth and bones. Plus B complex vitamins, including B12, niacin, vitamin B6 and riboflavin. Make sure you are getting the best quality beef you can source because where the animal comes from and the life it has lead makes a big difference to the quality you recieve. In New Zealand we are lucky most of our beef is grass fed, but don’t just assume, do your homework and source the best you possibly can.
