02 Apr Quinoa Flake Breakfast Pudding
Quinoa flakes are a great substitute for oats. Especially if you are someone who loves a creamy bowl of porridge for breakfast. Now oats are technically gluten free, but many oats get cross contaminated meaning they can contain small traces of gluten which can be problematic for people. I have experimented with oats a few times over the past year and my body just doesn’t seem to do well with them at all, even when they are certified gluten free and sometimes you just feel like a good bowl of porridge like you used to have as a kid. So unfortunately I tend to steer clear of oats for now and instead I go for something that is just as great. That is quinoa flakes, very similar to oats in how you cook them and you can create breakfasts, snacks or even dessert with them.
I tend to soak my flakes for at least 4 hours otherwise they are grity when you cook them. Just by soaking you then only need a few minutes to cook them and it turns into this super creamy dish, so great to do the night before if you wanted to try this as a breakfast. This recipe makes enough for 3-4 servings as I tend to make more and then have it in the fridge. I actually prefer this cold rather than hot so I may make this and just put it in the fridge for the next day.
To be completely honest I actually can’t remember where I got the quinoa flakes from as they have been in my pantry a while now gathering some dust, hence why I am using them today. They aren’t hard to find in stores though as I know I often see them. Most health stores will stock them and if your local one doesn’t there are plenty online.
1 cup quinoa flakes
1 cup water
2 tablespoon coconut flakes
optional – 1/4 cup raisins
Optional – 2 tablespoons coconut cream
Place all the ingredients into a small pot, stir and let it sit for 4 + hours or overnight.
Place pot onto heat and gently heat while stirring at the same time. It cooks fast so keep stirring.
If it gets to thick add more water, I often add upto another 1 cup of water to make an extra creamy dish.
Once it is smooth, remove from heat. This takes about 3-4 minutes.
Serve up hot or cold with your choice of fresh fruit or a drizzle of coconut cream/yogurt.
