Quinoa Summer Salad

Beautiful fresh summer salad that you can have had any time of the year. Perfect to make up for guests or to take to a pot luck as it looks so beautiful you just want to share or simple enjoy yourself. Looks stunning and tastes really fresh. I served this up with some simple roast chicken and it was amazing!

INGREDIENTS

Quinoa Red Capsicum Yellow Capsicum Snow peas Tomatoes Spring onion Fresh Parsley Avocado Oil Lemons
SERVES: 2

Cooking Instructions

To cook quinoa, first cover with water and soak over night. Then drain.

Place soaked quinoa in a pot and cover with double the amount of water, bring to a boil and reduce to a simmer.

Cook for 8-10 minutes, or until you see the quinoa open up and soften.

While quinoa cooking, bring some water to boil and drop snow peas in for 1 minute then remove.

Remove from heat the quinoa, drain any extra water and allow to cool.

Chopped and slice all the other vegetables and place in a bowl, drizzle with some oil and squeeze the juice of 2 large lemons over.

Once quinoa cooled stir through other ingredients and serve.
