30 Oct Raw Cacao Apricot Truffles
These are my go to quick little treats to whip up and have in the freezer. You can mix and match things a bit and jazz it up however you wish. For these truffles I kept it pretty simple and the result as always was just a perfect wee treat.
1/3 cup coconut oil or butter
3 cups shredded coconut
2 tablespoons chia seeds
1/2 fresh banana
1 cup dried apricots
5 tbsp cacao powder
1 heaped tbsp ground cinnamon
1/2 tsp himalayan sea salt
Place apricots in a pot, cover with water and bring to a boil, then drain.
Add everything including apricots to a food processor and blitz up until all combined. If it isn’t sticky enough add in some extra water, if to sticky add extra coconut.
Roll into balls and throw through some extra cacao or coconut as I did.
Store in fridge or freezer
