This beautiful Roast Pumpkin and Feta Salad is such simple dish that is so elegant and easy to prepare. I have been loving pumpkin at the moment as I get it every week in my organic vegetable box, so this dish was another wonderful pumpkin creation. I used some goats feta to sprinkle over to bring a bit of punch to the salad.
- Goats Feta
- Pumpkin Seeds
- Slice and chop up pumpkin into small pieces, drizzle some oil over top and place into an oven heated to 200 C.
- Cook pumpkin until soft and slightly browned on the edges
- Serve up with a sprinkle of pumpkin seeds and feta crumbed over top.
