- Left over cooked vegetables – mine was broccoli, cabbage, carrots
- 2 eggs
- Salt and pepper
- Olive Oil/butter
- Using a stick blender whiz up the vegetables until kind of smooth
- Add the eggs in and mix until combined
- Heat oil in pan, and cook.
A great simple breakfast, lunch or snack. Or even make for a brunch and serve with some yummy home made dips. You could make these look a little fancy with some salmon on top! Hmm I may have to try that out.
