Savory Pikelet

 

This recipe makes me think of my nana. Good old pikelets and jam. Can’t bet it. Hmm well I think I may of. These a a savory version of the good old pikelet. Kind of mini omelets.

 

 

Ingredients

  • Left over cooked vegetables – mine was broccoli, cabbage, carrots
  • 2 eggs
  • Salt and pepper
  • Olive Oil/butter

 

Cooking Instructions

  1. Using a stick blender whiz up the vegetables until kind of smooth
  2. Add the eggs in and mix until combined
  3. Heat oil in pan, and cook.

 

A great simple breakfast, lunch or snack. Or even make for a brunch and serve with some yummy home made dips. You could make these look a little fancy with some salmon on top! Hmm I may have to try that out.
