Grapefruit Jelly

Grapefruit is reknowned for helping the liver, and gelatin is incredibly healing for the digestive system. Both of these ingredients combined make this a super nourishing treat to have in the fridge.

Ingredients

  • 1 tablespoon Gelatin 
  • Juice of grapefruit
  • 1 Cup Boiling water
  • Honey (optional if you want it sweet)

Construction Instructions

  1. In a bowl place the gelatin and pour water over top, mix until dissoved and add in juice and honey if you wish.
  2. Place in the fridge over night.

I like my jelly really stiff, so I often do more than the recommended amount, in most cases they say 1 tablespoon to 400 mls, so this is slightly stronger. You decide how thick you want the jelly.

 

 

 

Steamed Christmas Pudding – Gluten Free, Grain Free

Ingredients

  • 4 cups Fruit Mince
  • 1 cup coconut shredded
  • 1 teaspoon baking soda
  • 1 cup ground almonds
  • 2 eggs

Cooking Instructions

  1. Mix all the ingredients in a bowl
  2. Seal the bowl with baking paper, then tin foil, tie up with string so secure.
  3. Place bowl in slow cooker, fill up with water till about 3/4 way up dish.
  4. Cover and leave to simmer for 8 hours.
  5. Remove from cooker, allow to cool. Unwrap and then rewrap with clean tinfoil, and leave for a few days to develop.

 

Proper xmas pudding can be left for up to two months, and is suggested to allow flavor to develop. I haven’t done this, got impatient and made to close to xmas. Will see how it is xmas day. Tasted pretty good the day I made it two. So up to you how long you leave it.

I reheated by placing bowl in pot of water for 20 minutes and served with Dairy free vanilla custard.

Christmas Fruit Mince

On a mission to make some christmas mince pies, and steam pudding and realized that all fruit mince you buy is packed with sugar and preservatives. So time to whip up my own. Get the best dried fruit you can get, so hunt out organic, these actually are the same price in most places for dried fruit. Then you can make this in bulk and freeze in cup sizes. Then when you are ready to whip up something using fruit mince you have some there.
I made this the night before I put on my xmas baking hat. Could do same day, completely up to you and how much time you have.

Quinoa Protein Pancake

This is a super dense and filling way to start your day. If you are someone who loves the heaviness of porridge for breakfast, then this could be something right up your ally. I actually made this for lunch, so pretty versatile. I used some powdered egg whites, we have this occasionally for emergencies to make a smoothie. Since we can’t have whey, we either use fresh egg whites in our food or this powdered. Fresh is better obviously, but these turned out pretty good, so might make an apparence again.

Chocolate coconut rough

Chocolate heaven! I LOVE chocolate!!! However last time I had some it was store bought and I ended up having to cut it out because of my digestive problems and it contained way to much sugar in even a 75% bar. However I have discovered how to make it, and that I can have some every now and then without issues. So here is my first attempt. Watch this space for more homemade chocolate recipes!!
