- Fish
- Onions
- Basil
- 1 clove of garlic
- Coconut milk
- 1/2 cup olive oil
- Lemon
- 1/2 cup apple cider vinegar
- Heat oven to 160 C /320 F.
- Place fish onto some tin foil and add ontop of that fish a table spoon of coconut milk and a squeeze of lemon and the onions. Wrap up the fish well in the tinfoil.
- Place fish in oven and cook for approx 10-15 minutes depending on size of fillets
- While the fish is cooking, put into a blender a hand full of basil leaves, olive oil, apple cider vinegar and garlic. Blitz it up. Taste it and you can adjust the flavors by adding in more cider or oil or basil.
- Check fish and remove once cooked. Serve up with basil, fish lemon and some spinach.
