Baked Apples

Another apple recipe! An old classic, good old baked apples. Serve this up with cream/ice cream and whala!

Ingredients

  • Apple
  • 2 tablespoons almond flour
  • 2 tablespoons shredded coconut
  • sprinkle nutmeg
  • sprinkle cinnamon
  • 1 tablespoon raisins
  • 1 tablespoon apricots chopped finely
  • 1 tablespoon honey
  • 1 tablespoon coconut oil

Construction Instructions

  1. Preheat oven to 180 C
  2. Place in a bowl all other ingredients, use your hands to combine into a crumbly mix
  3. De core the apples and stuff the apples with the crumble mix
  4. Place in oven and cook until apple soft and top golden. Around 20 minutes.

Chocolate Covered Super Seed Bites

This recipe combines two other recipes super seed bar with homemade chocolate.

Ingredients

    • 1/2 Cup Flax Seeds
    • 1/2 Cup Chia Seeds
    • 1/2 Cup Almonds
    • 1/2 Cup Sunflower Seeds
    • 1 cup Dates
    • 1 cup Dried Apricots
    • 1/2 Coconut Oil

 

Chocolate Topping

 

Construction Instructions
  1. Put it everything minus oil in a blender, blitz up into fine crumbs.
  2. Press the mixture into little cupcake holders.
  3. Press firming down.
  4. In another bowl, melt coconut oil and add to it cacao. Mix until smooth.
  5. Place on top of each seed mix chocolate.
  6. Put in fridge to set.

Super Seed Bar


Want a snack that is super simple to make, fuels you for your day, easy to pack up and take away with you? Then this is it. Super Seed Bar is easy to prepare. You will never buy store bough muesli bars ever again after trying these one out.

Ingredients

  • 1/2 Cup Flax Seeds
  • 1/2 Cup Chia Seeds
  • 1/2 Cup Almonds
  • 1/2 Cup Sunflower Seeds
  • 1 cup Dates
  • 1 cup Dried Apricots
  • 1/2 Coconut Oil
Construction Instructions

  3. Press firming down and put in fridge to set. 

Caramelized Apple

This is a super simple way to bring intensity into some apples. These caramelized apples taste amazing it could eat by themselves or with some  Ice cream with out ice cream maker.

Ingredients

Cooking Instructions

  1. Slice the apples. Preheat oven to 200 C.
  2. Melt honey and coconut oil together. Sprinkle with cinnamon and nutmeg. Toss through the mixture.
  3. Place in oven and cook until caramelized. Approx 25 minutes

 

Apple Bake

 

I love it when you are given fresh produce. Ben came home with huge box of local apples so its time to get creative with the apples. Wasn’t quite sure what to call this, so not the most original name. Tastes good though!

Ingredients

  • 4 apples grated
  • 1/2 cup almond butter
  • 100 grams butter
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp nutmeg
  • 1 tsp baking soda
  • 1 tablespoon apple cider
  • 1 tablespoon honey

 Cooking Instructions

  1. Preheat oven to 160 degrees. Line a bread tin with baking paper or grease with butter/coconut oil
  2. Grate apple and combine all other ingredients with it.
  3. Stir until well combined. Pour mixture into tin and place in oven.
  4. Cook until a skewer comes out clean. 25-30 minutes. 

Chocolate Fruit and Nut Bark

A dairy milk version of chocolate that is good for you! Yes its possible. The problem with store bought chocolate is not the chocolate but rather its the sugar and all the other ingredients. If you strip away the crap you are left with actually not much chocolate in most products. So quit buying the chocolate from the store and instead make your own. So delicious and a million times tastier than store bought crap. I made this without sugar as I like to have a little piece after dinner and sugar makes me wired and can’t sleep. This batch has no sugar!

Ingredients

  • 1/2 cup Coconut Oil
  • 1/2 cup Organic Raw Cacao Powder
  • 1 tablespoon coconut milk ( add more for more milky chocolate)
  • Fruit and nut mix I used raisins, apricots macadamia nuts chopped up 
  • Optional sweetner – Honey, coconut jam

Construction Instructions

  1. Melt coconut oil in a pot on the stove, remove from heat. 
  2. Add to it cacao and coconut cream. Stir until combined. 
  3. Chop up nuts and fruit and stir into mix.
  4. Line a tray with baking paper and pour mix over it until a thickness you want. I did around 1cm.
  5. Cover with another layer of baking paper and place in fridge until set.
  6. Break up and stir in containers in fridge or freezer. 

Chocolate Chia Mousse

I am ever so slightly addicted to this. It is so quick to make, feels incredibly indulgent and its amazing for you! Really low calorie and full of amazing nutrients to fuel you throughout your day. Feijoa Mini Cake

 

Feijoas are everywhere at the moment, I love them! You have to make the most of them while they are in season. Here is a really great recipe that tastes pretty amazing.
