Toasted Muesli – Grain Free And Gluten Free

Do you just love a big bowl of muesli in the morning? This recipe is incredibly simple, really filling and great for those eating a clean diet, grain free and gluten free. Contains no hidden nasty ingredients, just pure natural goodness!

INGREDIENTS

2 cups of pumpkin seeds 2 cups shredded coconut 2 teaspoons cinnamon 1/2 cup melted coconut oil 1/2 cup melted honey 1 cup chopped apricots 1 cup raisins
SERVES: 2

This mixture was enough for around 12 servings, you can easily half or even 1/4 it.

Cooking Instructions

Preheat oven to 180 C

In a large bowl combine all ingredients. Then using your hands mix around until oil and honey is spread evenly through the mix.

Pour the mix onto a shallow baking tray and spread evenly over it.

Place into oven for 8 minutes and then stir, then for a further 8 minutes again. Keep an eye on it so that it doesn’t burn.

Remove from oven after 16 minutes and leave to cool.

Place in glass jars and serve up with some fresh fruit, yogurt or coconut cream.
