This is the ultimate flu, virus and allergy fighting soup. Packed full of garlic and vitamin c. If you ever feel your body getting run down, or a sniffle in the family, get this soup into them straight away, breakfast, lunch and dinner. It works!
2 bulbs of garlic (so the whole lot, not just cloves, the whole family)
Tomatoes (As many tomatoes as you can get and that will fit in pot), if you have fresh awesome, at least 10-15, chopped up, or go for canned (without salt) 2-3 cans or more.
2 large onions
1 litre of chicken stock.
1/2 tube tomato paste.
1 table spoon butter
In bottom of pot melt butter then add in onions and chopped up garlic. Cook until onion begins to brown and become translucent.
Pour in chicken stock, tomato paste and tomatoes. Bring to boil, and simmer for 5 to 10 minutes.
With a stick blender, whiz the soup up so it becomes a smooth consistency and serve.
Really fast to make, and if its tomato season, make as much as you can, great to use as a sauce, or part of casseroles. Then there on hand to use when ever you feel bugs are near!
