Herbed Chicken Marinade

On Sunday we had some friends over for a summer BBQ lunch. I really wanted something fresh and vibrant to cook on the BBQ and this dish was just that! Loaded with flavour and just went amazing with the two salads I made to go with it.

INGREDIENTS

3 cloves garlic, finely diced or crushed Handful (approx 4-6 leaves) of fresh basil chopped finely Handful of fresh parsley chopped finely Handful of fresh thyme chopped finely Handful of fresh rosemary chopped finely 1 Tablespoon lemon juice ½ cup olive oil 8 boneless skinless chicken thighs
SERVES: 2

INSTRUCTIONS
Combine all the ingredients by placing into a large bowl and ensure all the chicken is well coated. Cover and place in the fridge for at least 30 minutes.
Heat your BBQ or pan and place the chicken on it.
Cook evenly on each side and ensure well cooked through.
Serve up and enjoy!
