Beef Heart, Bacon And Kale One Pot Wonder

Talk about nutrient packed! This is loaded! Every 6 months or so we buy half a beast, and I always say yes to getting all the extra bits and pieces like bones, liver, heart…….and tongue!!! Its easy to say yes, but now I am at the bottom of my freezer looking at all these offal bits and plucking up the courage to eat them. Liver I have been doing for a while and find it no problem, as I hide this inside meat loafs and meatballs.


1 beef heart 2 tablespoons butter 2 onions onion 4 rashes bacon 3 cloves garlic 1 cup beef broth kale

As for heart however I do believe this is the first time I have ever cooked it. I have in the past made raw meat patties for wee elly using the heart, but never took the plunge to make it for us.  I couldn’t remember if I liked it or not and when I actually ever tried it. I know I would of when I was a kid, but just couldn’t remember. So this we dish was a first and I am really pleasantly surprised.

Heart tastes like normal beef to me, nothing to strong or weird about it. Its tougher, so probably do in slow cooker next time, but not to tough as some cuts of meat I have tried and still worked really well cooking this way.

I wanted to ensure I masked any flavour if there was any and that this was a really hearty filling dinner. So what beats, bacon, onions, garlic and butter! Throw in some kale and you are fueled with power!

Cooking Instructions

Finely dice the heart and remove all the tough bits and pieces.

In a pan, heat butter and place in heart. Brown edges then add in bacon, onion, garlic.

Cook until heart is cooked through, then pour over broth. Allow it to simmer for 5-10 minutes until broth reduces.

Then throw in fresh kale and let it wilt and serve
