Beetroot Hummus Dip

Colour and variety in your food is so important and thats why I just love creating dishes like this.  Not only do they look amazing, they taste great to. Get into making foods like hummus means you know they are packed full flavour and nutrients which your body loves. Sure to impress around a platter or bbq. 

INGREDIENTS

2 large beetroot, peeled, scrubbed , cooked and chopped up 2 Tablespoons tahini 1/2 cup Sunflower seeds 1/2 cups walnuts 5 Tablespoons lemon juice 1 small clove garlic, crushed 1 Tablespoon ground cumin Zest from 2 lemons Salt and pepper to taste
SERVES: 12

Cooking Instructions

To cook the beetroot, clean and peel and cut of the top and any roots at bottom. Cover in a pot with water and cook as you would potatoes until they are soft to put a fork in. it should take about 30 minutes.

Put all the ingredients in a blender and blitz up until smooth.

Adjust ingredients if needed, and season.
