Blue Berry And Almond Cake

This simple cake is so quick to make and I actually used it to make a trifle like dessert. I served up with homemade coconut cream custard and fresh berries. The great thing about these sort of cakes is that you can freeze them and keep them there for when you really want a yummy treat. When you have healthy treats in the house you are going to be able to satisfy that sweet tooth, while staying on track with your health and fitness goals.


1 cup blueberries 2 tbsp honey 2 ripe bananas mashed 2 cups almond flour 1 tbsp vanilla extract 1 tbsp apple cider vinegar 4 eggs 1 tbsp cinnamon 1 tsp baking soda

Cooking Instructions

Preheat oven to 180 degrees.

Line a baking tin with baking paper, I used a round cake tin, you could use a baking loaf. Best size would be 20cm.

In a large bowl, mix dry ingredients

Add to that the wet ingredients and mix really well until combined. 

Mix in banana and then fold in blueberries.

Pour batter into tin and bake for about 35 minutes (or until skewer comes out clean).

Cool and serve
