Carrot Coconut Cookies – No Flour!

I made these cookies as one of the first clean eating recipes of foreverfit. You can check out the original here…..think I have come a long way since that photo!!

INGREDIENTS

6 Large carrots cooked 1 cup shredded coconut 1 cup LSA 1/2 cup crushed almonds or walnuts 2 tablespoons honey 1 tablespoon coconut oil
SERVES: 2

These are still a favourite, no flour, packed full of vegetables and such a cute little treat to have.
I made this batch slightly different to the original by adding in some coconut. I then did half the batch with some cacao powder and cacao nibs. Turned out really good, they are the photo at the bottom of page.

Cooking Instructions

Preheat oven to 200 C and line an oven tray with baking paper.

Using a stick blender mash up the carrots until smooth, then add to it all other ingredients.

Stir to combine, then using a spoon roll out mix into balls and place on oven tray.

Place into oven and cook for 15-20 minutes, or until golden on top, but not burnt.

Place on a rack to cool.

I keep mine in the freezer, and take some out as needed.
