Chocolate Chunk Banana Bread – Gluten Free
Oh I do like chocolate and I do like bananas! This wee combo is a stella mix. Loaded with amazing nourishing ingredients. Naturally gluten free and sweetened by real whole food ingredients. Not something you would have everyday mind you, but the perfect treat to make when you deserve it.
INGREDIENTS4 bananas mashed 4 eggs 5 tablespoons coconut oil, melted 1/2 cup coconut flour 1/2 cup almond flour 1/2 teaspoon cinnamon 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon vanilla extract pinch of sea salt 1/2 cup dark chocolate broken into chunks, I used this home made recipe.
Grease or line a loaf pan and preheat the oven to 180 C/350ºF.
Combine mashed bananas, eggs, coconut oil, vanilla extract and almond flour until well combined
Add the coconut flour, cinnamon, baking soda, baking powder, and sea salt to the other ingredients and mix well.
Gently fold in chocolate chunks
Place in oven and cook for 30- 40 minutes or until a skewer comes out clean.
