Clean Eating Whitebait Fritters

When ever I head home to Golden Bay we always have whitebait fritters, they are such a simple and iconic dish for us. I get slightly annoyed however when whitebait fritters get made with flour, because without doubt they are so much better with just simple egg and the juice of a lemon. They don’t require anything fancy and are just so good kept simple. Here is my favorite way to enjoy them.


200grams whitebait 1 egg Lemon Butter

Heat butter in a pan.
Place whitebait into a bowl and mix in the egg till well combined.
Using a spoon place mixture into hot pan and allow to cook underneath, until the top has set. Then flip.
Remove from pan once both sides are cooked and squeeze the juice of a lemon over top.
Serve hot and enjoy.
