Creamy Kale And Basil Pesto – Dairy Free

INGREDIENTS

Bunch of kale handful of basil Juice of one large lemon 1 clove garlic 1/4 cup olive oil 1 teaspoon salt 1/2 cup cashews pinch pepper 1/4 cup water
SERVES: 2

This was delicious as a dip to take to a BBQ with friends. I served it up with freshly made walnut and focaccia bread. The combination of the two made a great entree/appetizer to have that provided fuel and even the non clean eaters were into it, they totally choose this verses the chip bowl beside it. Take it to your next BBQ, try it out.

Construction Instructions

Place all of the ingredients into a blender, and mix up into a as smooth as you wish. The more you blend the smoother it will get.
