Gluten Free Banana Bread

This is one of those baking dishes that makes you feel all wholesome like. The flours used along side the eggs make this a bread that is packed full of protein. Its soft with just enough sweetness and goes perfect with a mid morning cuppa.

INGREDIENTS

1 1/2 cups almond meal 1 1/2 cups buckwheat flour 2 teaspoons cinnamon 2 teaspoons baking soda 5 bananas 6 eggs 2 tablespoons of honey 1 cup coconut oil
SERVES: 2

And no this isn’t a tiny loaf….we accidently may of eaten half of it before I took a photo. Whoopsi!

Instructions

Heat your oven to 180C
Melt your coconut oil and honey together by popping it into a small pot and heating on the stove.
Place into your food processor the bananas and blitz up until well mashed, or mash them in a bowl using a fork.
Add to the processor or banana bowl all the other ingredients and combine well.
Line a bread loaf tin with baking paper
Pour into the lined tin and cook for 15 mins. Cover with foil and cook for a further 45-50 mins or until knife comes out clean when inserted
