Gluten Free Zucchini Fritters

I think Zucchini could be one of my favourite vegetables. Thats a big call, but I think it might just be true. So I does make my heart happy when I have plenty in the fridge.

INGREDIENTS

4 cups grated zucchini 1/2 cup buckwheat flour 2 large eggs 1/2 red onion salt and pepper to season Olive oil for the pan
SERVES: 2

Here is a fabulous gluten free Zucchinni fritter that you could make plenty for the week ahead or simply as a nice easy brunch for the family. The flavour is very simple, so you can add a chutney to the side or I actually made a gaucamole with some of our excess avocados. Was such a good combo!

Instructions

Grate your zucchini and allow the zucchini to stand for 10 minutes. Using your hands, squeeze out as much liquid from the zucchini as possible. Transfer the zucchini to a large bowl.
Finely dice your onion and then add all the ingredients (minus the olive oil) together in a bowl and mix to combine well.
Add the olive oil to large pan set over medium heat. Once the oil is hot, tablespoon mounds of the zucchini mixture into the pan, pressing them lightly into rounds and spacing them part evenly.
Cook the zucchini fritters for 2 to 3 minutes, then flip them once and cook an additional 2 minutes until golden brown and cooked throughout.
Place the zucchini fritters to the paper towel-lined plate and immediately sprinkle them with salt and pepper.
