Homemade Vanilla Coconut Butter

Got sugar cravings? Do you struggle with blood sugar levels and resisting the temptation to reach towards sugary items. Try this out.


3 cups shredded Coconut 3-4 rehydrated dates 1/2 teaspoon vanilla  

Have a teaspoon of this next time you have a sugar craving, satisfy that feeling with out all the blood sugar spikes and aftermath of what refined sugar has on your body. If you havn’t tried plan coconut butter you really are missing out. To make it you simply blend plain coconut. Follow the first part of this recipe. I added in the dates and vanilla just for a little bit of fun.

Construction Instructions

Place coconut into a food processor. Blend for 1 minute. Scrap the sides down and continue to blend for another minute. Every minute just scrap the sides down. After approx 3 minutes you will notice it getting wetter and then around 5 minutes it will be resembling butter.

Add in the dates and vanilla blitz for another 1 or so until well combined and creamy.

Remove and place in a jar in the pantry or fridge.

Great to eat just off a spoon as a wee treat.
