Raw Zucchini And Rocket Salad With Creamy Avocado Dressing
We are just coming to the end of zucchini season and the zucchinis I am getting are massive marrows, they are bigger than our wee dog elly! I do love them. I often just grate them up and either quickly sauté them in some butter or have raw in a salad. Amazing carbohydrate source and a great vegetable to fill out your meal without the stodge.
INGREDIENTS
For Salad 4 cups Zuchinni/marrow grated Large handful of rocket leaves 1/4 red onion 1/2 avocado Ingredients For Dressing 1/2 avocado 1/2 cup lemon juice approx 2 tablespoons water
For this salad I wanted to keep it really basic as I didn’t have to many ingredients. The rocket was growing in the garden to give it its peppery kick and the avocados are still a weekly must have on my shopping while they are so cheap, so combining them all together created this wonderful creamy refreshing salad that was super satisfying and will go along side many protein sources. I simply had two boiled eggs with mine for lunch.
Instructions
Grate the zucchini and finely dice the red onion. With the rocket dice it into small fine strips to blend through the salad evenly. Top off with avocado diced into cubes.
To make the dressing, place the avocado and lemon into a bowl and using a stick whiz (or blender) blitz up until smooth.
Add in the extra water to help make it smooth and more runny if needed.
Drizzle dressing over salad and enjoy!
