INGREDIENTS
12 large tomatoes peeled and chopped or 4 cups of cherry tomatoes 1/2 onion roughly chopped 2 stalks of celery finely diced 1/4 cup fresh flat leaf parsley chopped 10 basil leaves 2-3 garlic cloves chopped finely 1/2 tsp thyme 1 tsp oregano salt and pepper to tasteMy cherry tomato vines are almost near there end, but they are still pumping out the fruit. I like to stir a tablespoon or two through some homemade broth and have it as a nourishing filling soup along with my dinner.
Instructions
Place everything in the slow cooker and cook on high for at least 3 hours.
Place in a jar and keep in the fridge, and store any extra in the freezer to pull out over the winter months.
