Vanilla Sponge Cake – Gluten Free
I made this gluten free, grain free sponge recipe to use for gluten free chocolate lamingtons. It was perfect. You could keep as a simple easy cake, or you could jaz it up with some of the flavor combos below.
INGREDIENTS4 eggs 3/4 cup coconut cream 2 teaspoons vanilla extract 2 tablespoons honey 1/2 cup blanched almond flour 1/2 cup coconut flour 1/4 teaspoon himalayin rock salt 1/2 teaspoon baking soda
Preheat oven to 350º
In a large bowl whisk together eggs, coconut milk, vanilla extract and honey.
Add to that almond flour, coconut flour, salt and baking soda.
Using a whisk mix ingredients until well combined and a smooth batter.
Grease a baking dish and pour in batter. I used a square 20 x 20cm dish.
Bake for 30 minutes and then cool for 1 hour
To make this more interesting there are some great combinations you could try
Blueberry and Almond Cake
Add some crushed almonds to the batter and fresh or frozen blueberries
Add in a few teaspoons of cinnamon to the batter
Lemon zest cake
Add lemon juice + zest to the batter
Slice thinly some apples and layer on top of cinnamon cake batter
