Banana And Date Muffin

A perfect little treat. These muffins don’t have any added sugar. The natural sweetness comes from the banana and the dates. They are super soft and tasted create straight out of the fridge cold during the week. Perfect for kids lunches, a quick snack on the go or a delicious treat on the weekend.

INGREDIENTS

3 ripe bananas 3 eggs 3 Tbsp extra virgin coconut oil 1 cup dates chopped up 1 tsp vanilla 2 cups almond flour 2 tablespoons coconut flour 1 tsp baking soda 1/8 tsp salt
SERVES: 2
Cooking Instructions

Preheat oven to 350F and grease muffin tin with butter or coconut oil.

Place all other ingredients into a large bowl and blend until smooth.

Pour batter into muffin tins, I made 12 muffins out of my mix.

Bake for 35-40 minutes.  Or until a skewer comes out clean.

Remove from tin and leave to cool on a wire rack.
