4 Ingredient Rich Chocolate Slice

I am in the habit of making this regularly to have in our fridge during the week. Its super simple to make and the smallest of slices will leave you satisfied. Naturally free of gluten and dairy. You can then add in some dried fruit or nuts to give extra texture and some burst of sweetness. I am a big fan of dried cranberries!

I have made it as a slice because it takes less time to make, but also goes amazing rolled into balls. I often make as a wee gift and roll in dried raspberry, crushed nuts, cacao or shredded coconut if I’m feeling fancy.

INGREDIENTS

1 x 250gram block of quality dark chocolate (I use Whittaker's Dark Ghana all though this has a little sugar, there are sugar free brands) 1 cup coconut cream 1 cup almond meal 1 cup shredded coconut
SERVES: 24

First melt the chocolate using a double boiler method

Add to the chocolate the coconut cream and mix until smooth and creamy.

Then stir in the almond meal and coconut until well combined.

At this stage you can add in any extra things like dried fruit or crushed nuts.

Line a sqaure 20x 20  baking tray with baking paper and spoon the mixture in.

Flatten it off using the back of your spoon and sprinkle with a little extra coconut.

Place in the fridge to set for 1-2 hours and then slice into small bite size pieces.

Keep stored in the fridge in an airtight container.
