Kiwifruit Muffins-4

When you have got kiwifruit that need to be eaten, the best place to pop them is into some fabulous gorgeous wee muffins. These are just stunning right out of the oven and also great to freeze or pop in the lunch box. You could also make with any fruit you have on hand, banana, berries, apples or pears.

Ingredients

  • 4 cups almond flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 4 mashed kiwifruit
  • 2 tablespoons¬†flaxseeds
  • 1/2 cup coconut oil
  • 1/2 cup melted honey
  • Zest of two lemons
  • 3 eggs

Cooking Instructions

  1. Pre-heat oven to 170 degrees celsius. Grease muffin tins with coconut oil or butter
  2. Mix together all the dry ingredients (minus flaxseeds), then add the oil, mashed kiwifruit, honey and eggs. Mix until well combined then stir through the flaxseeds seeds.
  3. Place into a hot oven and cook for 20-25 minutes or until golden and a skewer comes out clean.
