Almond Satay Kelp Noodle Salad
A bowl that is packed full of vegetables and packed full of flavour. Almond Satay Kelp Noodle Salad is a sneaky way to get more vegetables into your dish. This dish is so fast to whip up and tastes fantastic!
INGREDIENTSKelp Noodles Beans Spinach Almond Butter Coconut cream Salt and pepper Crushed almonds Chilli flakes
In a pan bring some water to a boil and then place in kelp noodles to soften. Let them simmer for a few minutes until soft, then rinse and drain.
In another bowl, place almond butter and coconut cream and some chilli flakes (you be the judge, I used less than a quarter teaspoon). Whisk to combine.
In a pot bring to boil some water and drop in beans for 3-4 minutes to soften, then remove and drain.
In a large bowl place noodles, cooked beans and spinach and pour over almond mix. Stir to combine, the more you stir the more the spinach will wilt, so stir as much you you want then serve. Sprinkle with some crushed almonds.
