INGREDIENTSFor the salad 1 teaspoon minced garlic 250 grams prawns 1 tablespoon butter ½ teaspoon chili powder 1½ cups sliced avocado 1/2 cucumber 4 cups chopped spinach or lettuce fresh chopped coriander and parsley For the dressing 1 inch piece of fresh peeled ginger grated 3 tablespoons avocado oil 3 tablespoons lime/lemon juice 1/2 avocado
Tauranga seems to have endless avocados at the moment and I never seem to get sick of them. I guess that is the bonus of living up this side of country they just seem to keep growing. Every day I pass road side stalls selling them for a dollar and the ones I get from mount whole foods are just massive at the moment! It is definitely a tree I want to have in my own backyard one day.
Now when you combine these avocados with prawns, ginger and lime you have a fabulous summer dish to enjoy. This is a great mid week meal as it takes minutes to make and will also go down a treat for guests. Amazing flavours and a good balance of fats and proteins to leave you satisfied.
Heat the butter in a small pan or on bbq over medium high heat.
Add the garlic and prawns then sprinkle with the chili powder.
Cook for a few minutes on each side until the prawns are no longer clear and our brown gently on the outside.
Cut the salad portion of the avocados into little cubes, then the cucumber into fine diced pieces.
Finely slice the spinach and arrange in the base of a bowl.
Add in the cucumber, avocado and freshly cooked prawns.
Puree all the dressing ingredients together in a blender or food processor until smooth then drizzle over the salad.
Top with fresh herbs and season with salt and pepper
