I was after a chocolate fix so I whipped this up and I made plenty so that I could freeze it and have it over the weeks to come. I keep seeing freeze dried berries and fruit popping up in some of my favourite stores and I wasn’t sure how they would work in some recipes, so I thought I would try them out here first. Its the perfect spot for them! I don’t think fresh berries would work because they would be to wet, so this was magic!
I prefer my chocolate without any sugar, but ben thinks its to bitter, so I make half with some honey added to it.
Ingredients
- Freeze dried raspberries, I used fresh as
- 1 cup raw organic cacao powder
- 1/2 cup coconut cream
- 1/2 cup coconut oil
- 1/2 cup coconut
- Optional honey to taste
- Melt coconut oil and add to it cacao, cream, coconut and honey. Mix until well combined.
- Gently stir in raspberries.
- Onto a board cut a large peice of glad wrap or tinfoil then place the mixture in a line on the foil.
- Roll it up and be sure to squeeze it so it is tight and not crumbly, tie one end and then push to that end a little then tie the other end.
- Place in the freezer to harden up. Then slice and store either fridge or freezer.
