Sliced Zucchini And Feta Salad
A naturally gluten free simple salad, using the base of Zucchini to carry the flavours bought in with the dressing and feta. So good, video included on how to make it.
INGREDIENTS
4 medium sized zucchini 1/4 cup feta crumbed 1/2 cup almonds roughly chopped 2 handfuls spinach leaves Dressing Equal quantity of lemon and olive oil Season with salt and pepperWith only a few ingredients you can make a fresh and tasty salad to enjoy. The zucchini provides a stunning base to the salad and the feta and almonds give it texture. I made a very simple dressing to go with this, but you can jazz it all up by adding a little more flavour to the dressing. Things like ginger, garlic and honey would work a treat.
Instructions
Using a potato peeler slice strips of the zucchini up and place into a bowl.
Add to the zucchini your spinach.
Make up the dressing by placing the ingredients into a jar and giving it a quick shake, then pour over vegetables and mix through.
Serve the zucchini up on a plate and scatter over the almonds and feta.
Season with salt and pepper and enjoy.
